According to the winemaker's traditions and as a testament to their long experience in grape blending, Extra Brut Extra Old champagne ages in barrels with yeast for at least three years. The Extra Brut Extra Old champagne is then aged in bottles in the wine cellar for another three years before being disgorged. This is a so-called double maturation. The champagne is made from 100% reserve wines, the oldest of which dates back to 1988. The blend contains quality wines from 17 different grape harvests over a 30-year period, used by winemaker Dominique Demarville to make champagnes. In view of the richness of the quality wines contained in Extra Brut Extra Old Champagne, only a very small amount of sugar is added to the mixture – 3 g/l. Extra Brut Extra Old is a wine that can be easily adapted to different situations – with the freshness of an aperitif and the depth needed to enjoy it next to dinner. The flexible yet characterful wine is perfect for both light, delicate food nuances as well as for more rich flavours. Extra Brut Extra Old goes especially well with redfish, crab, veal, mushrooms and Comté cheese.
