Reserva de la Familia sparkling wine is made from the traditional white varieties of Cava: Macabeo, Parellada, Xarello and Chardonnay, certified by the Blanc de Blancs label. Although Cava DO wines are produced throughout Spain, the most prized sparkling wines come from the historical center of Cava production - Sant Sadurní d'Anoia in Catalonia. Cava is produced using the traditional method like champagne. This means that the wine goes through a second fermentation in the bottle and ages on the lees for a long time. According to the classification, Reserva category wines are aged for at least 15 months. This Cava ages in the bottle for 30 months. This dry, elegant sparkling wine is a pleasant aperitif while the meat is cooking. Its properties come out even better with seafood, such as oysters: raw, flavored with lemon juice or mignonette sauce, or grilled (you can add greens, onions, garlic, young hard cheese to taste). Perfect with scallops or grilled white fish with lemon juice or beurre blanc sauce, as well as chicken or turkey hash with herbs in a kefir-yoghurt marinade.
