Texture is fine — delicate bead of bubbles (perlage), a creamy yet light mousse, giving a refreshing but smooth mouthfeel. The finish may carry a subtle saline or mineral edge, giving elegance and making it a great match with salinity-rich dishes.

From a single vineyard that grows 695 metres above sea level, the mountainous Ceres site offers sunlight without the heat, for a unique, fullflavoured, chardonnay-based Cap Classique. The wine features high notes of ocean minerals with flinty and fynbos aromatics. Bergamot, lemon and grapefruit weave between greengage and pear, carried in an energetic mousse, which is warmed by hints of white cardamom spice and extended lees contact of 36 months.
