Inniskillin harvests its grapes at a temperature of -10 oC. The yield of Icewine grapes is very low, only 5–10% of the normal harvest. The wine is matured in French oak barrels, resulting in a dessert wine with a rich and tropical aroma and taste, which retains great acidity.
