A fresh, dry and elegant French rosé made using the ripest grapes from the estate's various gardens. Some berries are also obtained from neighboring berry growers. The gardens are mostly located on the southern slopes with chalk-clay soil. The grapes are picked from sunrise to noon, this is done only by hand, the berries are placed in small boxes to prevent oxidation of the berries. Special emphasis is placed on keeping the berries fresh, for this purpose sticks of dry ice are placed in the boxes to keep the berries cool. Upon arrival at the winery, the berry bunches are sorted electronically and then manually at least 3 times. 90% free-run berry juice and 10% berry juice obtained from the first gentle pressing are used to make wine. 95% of the wine is fermented in stainless steel tanks at a temperature of 10 - 14 degrees, each tank has its own temperature control, 5% of the wine is fermented in small oak barrels. Made using three grape varieties (Grenache, Rolle (Vermentino), Cinsault).
