Harvested in the cooler hours of the morning, the grapes are pressed at a temperature of 11-12°C. The 'free-run must' is then decanted for 24/48 hours. Once clarified, it begins its alcoholic fermentation at a temperature of 16°C. At the end of the process, the wine is drawn off and placed to age in stainless steel tanks for 6 months, with weekly bâtonnage. Excellent as an aperitif, it pairs well with fish or vegetable first courses, but is also an excellent accompaniment to seafood, shellfish and salt-crusted fish.
